Minnesota Wild Rice Bake with Ground Beef
A hearty, rustic casserole inspired by traditional wild rice dressing — made with ground beef, mushrooms, and cranberries for a cozy, comforting dish that’s perfect for cold-weather dinners or holiday tables.

Materials

- 1 lb Ground Beef browned and drained
- Add: ½ tsp sage ½ tsp thyme, ½ tsp fennel seeds (optional), ¼ tsp red pepper flakes, salt & pepper
- A splash 1–2 tsp of Worcestershire sauce or a dash of soy sauce
- 2 cups Cooked Wild Rice or a wild + long-grain blend
- 1 Onion chopped
- 2 –3 stalks Celery diced
- 1 cup Mushrooms sliced
- 1 small can Water Chestnuts chopped
- ½ cup Dried Cranberries or fresh, chopped
- 2 Eggs lightly beaten
- Salt and pepper to taste
- Butter or oil for sautéing
- Sliced Almonds for garnish
Instructions
- Brown the ground beef in a large skillet with a bit of oil. As it cooks, season with sage, thyme, fennel, red pepper flakes, salt, and pepper. Drain if needed.Add: ½ tsp sage
- Sauté onion, celery, and mushrooms in butter until tender. Add them to the cooked beef.2 cups Cooked Wild Rice, 1 Onion, 2 –3 stalks Celery
- Stir in water chestnuts, cranberries, and cooked wild rice.1 small can Water Chestnuts, ½ cup Dried Cranberries, 2 cups Cooked Wild Rice
- Mix in two beaten eggs to help bind the mixture. Add a splash of Worcestershire or soy sauce if you want a deeper flavor.
- Spread into a buttered casserole dish, bake at 350°F for 30–40 minutes until lightly golden and set.
- Top with sliced almonds before serving.
